Each knife is individually handcrafted using Cangshan X-7 Damascus Steel in a process that involves 67 layers and a special formula, resulting in exceptional durability, stain resistance, and edge retention. The knives have won prestigious awards and have patented designs.
After undergoing an extensive six-stage heat treatment, each blade is hand sharpened to a 16-degree angle on both sides. The knife has a 5.5" handle, a 7" blade, and a Rockwell Hardness Scale rating of HRC 60 +/- 2. It comes with a dark Walnut wood magnetic Saya style sheath for protection.
Kiritsuke knives are designed with a straight edge for vegetables and a long blade for slicing fish. They require skill in handling traditional Japanese knives due to their unique design and single edged blade. The Saya sheath features strong magnets for added safety.
