Included in the set are a 9" Honing Steel, a 9" Bread Knife, an 8" Chef's Knife, a 7" Santoku Knife, (4) x 5" Fine-Edge Steak Knives, a 5" Serrated Utility Knife, a 3.5" Paring Knife, 9" Come-Apart Shears, and an Ash Wood Knife Block.
The blades are hand sharpened to a 16-degree angle on each side. They have an HRC of 58 +/- 2 on the Rockwell Hardness Scale.
The blades are forged from 67 layers of Cangshan's proprietary X-7 Damascus Steel. They also go through Cangshan's proprietary ULTRA6 heat treatment to ensure their strength and function.
